Description

This course is suitable for those who want to start their career as a barista or for those just starting out in the role. This is why the course begins with a presentation of the coffee supply chain from the fruit on the tree to roasting and blending.

​

Through a tasting exercise, students learn the concept of perfect espresso in order to establish the quality standards of a cup both technically and sensorially. The students then learn the concepts of under-extraction and over-extraction and their main causes.

​

Students deal with the technical skills necessary for making espresso and proceed to a long series of exercises on different Italian-style blends to acquire skills on multiple types of product. This part of the course also examines the most common mistakes in the extraction and management of coffee, their causes, sensory effects and solutions.

​

Subsequently, the students learn the concepts of Italian cappuccino and of correctly frothed milk, always through tastings to understand the correct sensory profile. Numerous milk steaming and pouring exercises follow, performed both with the guidance of the instructor and independently. The cappuccino is followed by exercises on basic coffee drinks.

 

Furthermore, at the end of the course students learn how to perfectly clean both the espresso machine and the coffee grinder.

Professional Level

PREMIUM LEVEL

For professionals with good experience and a solid knowledge who wish to acquire a specific vision on Italian espresso, cappuccino, coffee drinks. The course is immersive to focus only on relevant aspects and skills.

Description

This is an intensive course for those professionals who already have solid professional skills and who wish to understand Italian espresso and cappuccinos in detail. The prerequisite of the course is therefore to master the technique for extracting espresso, steaming milk and pouring it. In fact, the course focuses on the calibration of these skills applied to the specific Italian context.

​

During the course students use Italian-style blends studied by the Italian Barista School, which represent typical blends of the market. In this way students get trained to work with any type of Italian espresso. Each exercise begins with a sensory evaluation of the product and with the demonstration by the trainer of the perfect extraction. Students must reproduce the profiles in the cup and evaluate them sensorially.

As for cappuccino, the course focuses on steaming and pouring milk in Italian style with particular attention to the sensory profile of the product in the cup and to the balance between milk and different blends.

Description

This course is recommended for students who already have a solid preparation in the cafeteria and who want to broaden their competence on coffee drinks.

 

Prerequisite of the course is the ability to perfectly prepare an espresso, to correctly steam and pour the milk and to master the minimum technique for mixing (in particular, to correctly use barman tools).

​

During the course, various coffee-based drink recipes are discussed, some of the Italian tradition, others developed by the Italian Barista School, both alcoholic and non-alcoholic.

 

At the beginning of each exercise, the instructor prepares the coffee drink for the students, explaining in detail all the phases and steps. The students taste the coffee drink and discuss it with the instructor, then they must reproduce it under the guidance of the instructor.

Premium Level

HOME BARISTA

We offer courses for coffee lovers who are interested in acquiring a basic knowledge of the world of coffee and in getting quality products even in their own domestic context.
